It makes the flour work, the yeast active, the shape of the loaf is you, and unique. The flavorings and add ons are yours too/two. THEN we know when this part is complete, it is time to RISE!! Cinnamon rolls or garlic bread, you decide whether you are sweet or savory. No flops needed/kneaded now for those ready to take their place in the new earth's heart.
